A few years ago adding salt to sweet treats was a strange concept to the English palate, but the French have long combined salty and sweet flavours to make irresistible pairings.Sea-salted caramel provides a wonderful contrast on the palate and enhances the tasting experience. Sea salt brings out the subtle flavours in artisan caramel and intensifies it, creating a taste which is almost savoury, and the perfect complement to milk chocolate couverture. My preference is for caramels and caramel-filled chocolates made using traditional artisan methods with French Guérande sea salt and Normandy butter. Truly divine!
